Instant Pot Brown Sushi Rice

Sushi rice can seem mystifying, but we promise that is it very simple to make at home. We recommend using high quality short grain brown or white rice. As always, brown rice is more healthy but will take longer to cook and will be slightly chewier than white rice. We like to make the brown sushi rice in an instant pot to cut down on cooking times. With just a few tricks below, this delicious rice can be yours in less than 30 minutes. 

Instant Pot Brown Sushi Rice 

1 cup short grain brown sushi rice 

2 cups water 

2 tbsp rice vinegar

1 tbsp white sugar 

1 tsp salt 

Preparation: 

Wash the rice very well, filling a bowl with water and scrubbing the rice until the water runs smooth. If you have time, soak the rice for 20 minutes - overnight. Soaking the rice will promote even cooking and reduce the cooking time, but it does require planning ahead. Add the rice and water to the instant pot, stirring to mix evenly. Cook on high for 19 minutes, if not soaked and 17 minutes if soaked. Release the pressure manually. If you are not using a pressure cooker, bring rice to boil then reduce to simmer and cook 45 minutes. Turn heat off and allow to steam for 10 minutes before opening the lid and fluffing the rice. 

Once lid is off, add the vinegar, salt and sugar to the rice and stir while the rice is still hot. Fan the rice for a glossy finish and taste to ensure seasoning is to your liking. Add this rice as a base to our "poke bowls" or sushi tuna maki.
